When I was growing up, our house was always the family hub. My mother loved hosting, cooking, and entertaining, and all holidays and major events, like baptisms, graduations, and birthdays, were celebrated in our home. While all my aunts are talented cooks, each with her own signature dish and area of expertise, my mom always had her own flair, that magic touch. Arroz con pollo risotto-style was one of her specialties. This dish pays tribute to that recipe. Saucier than the classic arroz con pollo, this slow cooker rendition is hands-off and easy, using riced cauliflower and hemp seeds.
